I have a quastion about period food service protocol. Suppose Christmas dinner at Downton Abby included a fine roast goose. Who would do the carving? Would the goose be presented whole to the table? Surelly Lord Grantham would not wield the knife! Would Branson do the honors at a side table? Or would the bird be returned to the kitchen where Mrs. Patmore would dismantle it and arrange it attractively on a serving piece to present to the guests? How were such things done by the early 20th century gentry?
